Putu, the sweet (green) snack

Putu or kue Putu (pronounced: (koe-รจ) poetoe) are cylinder shaped soft pandan rice flour cakes of approximately 3 centimeters filled with soft (sizzling hot) Javanese sugar. Putu is sold by street vendors and made on site. The seller pushes a small amount of rice flour ‘dough’ (often with pandan and therefore green in color) into a bamboo mold, then a scoop of Javanese sugar (Gula Jawa) and again a bit of rice flour mix. In the bamboo mold, the whole thing is steamed over a large pan, causing the sugar to melt. It is ready in a few minutes and the putu is tapped out of the bamboo mold and topped with freshly grated coconut. Enjoy your meal and don’t burn your lips with the hot sugar!
